Pumpkin Bread

Shopping list:

  • Shortening

  • 15 oz can of pumpkin filling

  • Sugar

  • Flour

  • Salt

  • Baking powder

  • Baking soda

  • Ground cinnamon

  • Ground cloves

  • 4 eggs

Toys needed:

  • Large mixing bowl

  • Measuring cups

  • Hand mixer (like you use for making cookies)

  • 3 bread pans

How to make it:

  1. Cream 2/3 cup of shortening with 3 cups of sugar and all 4 eggs in a large mixing bowl

  2. Then add the entire 15oz can of pumpkin filling and mix well

  3. Add 2/3 cup of water to the mix

  4. Add 3 1/3 cups of flour, 1 1/2 tsp of salt, 1/2 tsp of baking powder, 2 tsp of baking soda, 1 tsp of ground cinnamon and 1/4 tsp of ground cloves. Mix very well until all ingredients are evenly distributed.

  5. Get 3 bread pans and grease the bottom and sides of the pan well. I suggest using shortening to do this instead of butter or Pam. Preheat over to 350 degrees.

  6. Add dough in even amounts to all the pans. Make sure the dough spreads out evenly within the pan itself as well.

  7. Place all three pans in the oven. Make sure there's space between the pans (don't jam them all together) for air movement. Bake at 350 degrees for one hour.

After an hour is up the bread should be just about done. The crust will be a darker brown color, and when you gently touch a finger to the center of the bread, it should spring back (much like a cake would). Let the bread cool for at least a half hour (more if needed) before trying to cut it -- otherwise you'll just tear the bread apart.

Makes three loaves of the best pumpkin bread you'll ever eat. It takes about 15-20 minutes to prepare, and an hour to cook -- so the whole thing should take less than two hours to bake.

[...] Once I was done doing chores in the yard, I went in to make some of my famous pumpkin bread for the Thanksgiving feast. [...]

[...] I made a wonderful batch of pumpkin bread on Friday, and boy is it delicious! I’ve already consumed one loaf and given another to my parents (traded, really, since I got a bunch of homemade soup from them in return). So I only have one more loaf left… but it’s trivial to make, so I’ll probably end up with some more by the end of the month. :-) [...]
